What does Old Kombucha mean when we says it's “Craft Brewed”?
Our Kombucha is the product of a natural fermentation, all what we do is based on the traditional brewing process. To make the difference, we’ve added an Italian touch to make unique every blend of high-quality organic teas, herbs, and dried fruits that are steeped together to make our unique flavor profiles. This is for us the meaning of “Craft Brewed”.




It would be easier to make a large batch of ‘conventional’ kombucha with a cheap tea but we’re proud to use high-quality organic ingredients to satisfy our customers; we’re Italian.. we believe in the art behind the flavor. If you love the taste of our kombucha compared to a lot of other kombuchas out there, that’s the reason.

- Beneficial bacteria and yeasts (acetic acetobacter, lactobacillus) that can help your gut with the addition of healthy flora to aid your digestion
- Organic acids: acetic acid, lactic acid, glucuronic acid and gluconic acid. These are known to improve bioavailability of vitamins, inhibit presence pathogenic bacteria and prevent the accumulation of heavy metals. And finally they support your health by modulation of your immunity system.

Old Kombucha is raw, no pasteurised and live. We wouldn’t dream of pasteurizing our Kombucha and kill the bacterias that helped us to create this product. Also, the pasteurisation process destroy all the benefits into Kombucha and transform the flavour.

Is there sugar addition Old Kombucha?
A lot of people ask us, “Is sugar added Old Kombucha?” We’re happy to answer! In order with traditional Kombucha recipes, for its fermentation, there must be three ingredients:

Great question. Any type of fermentation produce a bit of ethanol. Most people don’t know that homemade kombucha has an alcohol content as high as 3%! In order to make authentic our raw kombucha and abides by alcohol rules, we’ve studied and use a production method during fermentation process who help us to monitorate alcohol and maintain a continuos regulation of the temperature and time to reduce it at minimum quantity, below 0.5%. That’s help us to avoid an expensive distillation process and mantain natural & raw our kombucha and live its benefits.
